One of my favorite salads to whip up is one I picked up from my mother-in-law. She’s from Newfoundland, and her mom taught her how to make it. It’s super simple, just like all Newfoundland recipes, but it packs great flavour. My husband and kids are always asking for it as a side dish when we’re having burgers, pulled pork sandwiches, sausages… you know the drill!
Here is what you will need:
- Red or russet potatoes (approximately 8-10) peeled and cut into quarters
- 1 – 1/2 cups Miracle whip ( you can use mayonnaise but I don’t find it as flavourful)
- 2-3 chopped spring onion
- 5-6 hard boiled eggs
- 1 cup of frozen peas and carrots
- One Granny Smith apple peeled and diced into cubes
- Salt and pepper
- Paprika
Here is how to make it:
- Peel and cut the potatoes into quarters and a boil in a pot of water for 20 minutes
- While the potatoes are boiling, hard boil the eggs. When they are cool enough to handle, peel and chop all but one egg and set aside.
- When the potatoes are ready, drain and place in a serving bowl. Using a potato masher, coarsely mash the potatoes into chunks.

- Fold in the chopped eggs, cup of frozen peas and carrots, chopped onion and apples while the potatoes are still hot



- Fold in the Miracle Whip and season with salt and pepper
- Take the remaining are boiled egg and cut into quarters and add to the top of the salad.
- Sprinkle with paprika and chill in the fridge until ready to serve.
