I totally love when fresh berries are in season! I can’t resist grabbing them to throw into my salads, desserts, and drinks for that extra pop of texture, u, and u. Just last weekend, I picked up some gorgeous Ontario strawberries at the farmers market. While I was hulling the tops off, I realized it was such a waste to toss them away. Then it hit me—why not use those strawberry scraps to whip up a yummy flavoured vinegar to take my summer salads to the next level? You can use any berry really that you want, I chose strawberries because it is what I had on hand, but feel free to experiment with raspberries or even blackberries to make this easy flavoured vinegar recipe.

Here is what you will need:
- Tops of a pint of strawberry’s including the green leaves
- One glass jar with a tight lid
- Vinegar of your choice (I used a white wine vinegar)

Here is how to make it:

- Add the strawberry tops to a jar large enough to hold the vinegar
- Add the bottle of white wine vinegar to the jar and seal the jar closed with the lid


- Let the flavours marry for a minimum of 24 hours (I left mine for 3 days)
- Once the flavours have married transfer your strawberry vinegar to a a bottle and use as you would normally to salads, marinades, etc.
