Fall Time Fun – Leaf Cookies For The Kids

I first came across this recipe while pinning on Pinterest. I thought, what a cool idea to make fall cookies with all these colours for my kids – why hadn’t I thought of it???
I always love when I find recipes that get them baking in the kitchen with me. However, when I was reading reviews of this recipe, I quickly found out that the recipe was flawed and most people had a hard making the ingredients work. For me, baking ingredients are an expensive, thing to waste,  so I didn’t want to chance trying to make these cookies without a fool proof cookie recipe. So I used a classic sugar cookie recipe.  You can use any cookie recipe that you wish, the fun part about this, is really enjoying the time making them with the kids.

Here is what you will need: 

  • 1 1/2 cups unsalted butter, at room temperature
  • 3/4 cup sugar
  • 1 egg yolks
  • 12 tsp vanilla extract
  • 2  cups all-purpose flour
  • 1/4 tsp salt
  • Food colouring

Here is how to make the cookies:

  • In the bowl of an electric mixer fitted  beat together the butter and sugar until light and fluffy.
  • Add the egg yolk and vanilla and mix well.
  • Sift together the flour and salt into  the butter mixture and mix well.
  • Turn the dough out onto a work surface and divide into 4 equal portions. Add a food colouring colour to each portion and shape into a ball and then flatten into 4 disks.
  • You can either keep the different coloured disks separate or stack them on top of each other, cut into for equal portions and reshape them into disk for multi coloured leaves.
  • Wrap in plastic wrap and refrigerate for a  minimum of 2 hours or ideally overnight.
  • Let it soften slightly at room temperature before continuing.
  • Position a rack in the upper third of an oven and preheat to 350°.
  • Prepare 2 large baking sheets with silicon pads or parchment paper.
  • On a lightly floured work surface, roll out a dough disk 1/4 inch thick.
  • Using leaf shaped cookie cutters and transfer the cutouts to the prepared baking sheets.
  • Gather up and reroll the scraps and cut out more cookies.
  • Repeat with the remaining dough disks.
  • Bake until the cookies are golden on the edges, about 8 minutes.
  • Transfer the cookies to wire racks and let cool completely.
