Banana Bread

There are all types of banana breads that you can make, plain, with raisins, chocolate chips or nuts, even vegan. Everyone seems to have a banana bread recipe in their arsenal of go to recipes as well. It is a great way to use up bananas when they are overripe so there is no waste. In fact, banana bread became quite popular during the depression because housewives could use up what at the time was considered expensive produce, without having to throw away overripe bananas. Awesome!

Banana bread was one of the first things I learned how to bake. This recipe was also one of the first I created on my own and has changed over the years, as I tried different combinations and ingredients. Some of the ingredients might surprise you but give it a try before you judge. If you do, let me know what you think.

The kitchen smells so good when it is fresh out of the oven.

Here is what you will need:

  • 3 ripe banana
  • 1/2 cup of miracle whip (yes miracle whip)
  • 2 eggs
  • 3 tbsp of orange juice
  • 1 tbsp of grated orange peel
  • 1 1/2 cups of flour
  • 1/2 cup of sugar
  • 1/2 cup of brown sugar
  • 1 tsp salt
  • 1 tsp baking soda
  • 2 tsp baking powder
  • 1/2 cup chopped walnuts (optional)
  • 1/2 cup each of sweet and semi-sweet chocolate chips (optional)

Here is how to make it:

  • Preheat the oven to 350°.
  • Grease a loaf pan with butter or cooking spray.
  • Mash the bananas in a bowl.
  • Add the miracle whip, eggs, orange juice, orange peel and whisk together until well combined.
  • In a separate bowl combine flour, sugars, salt, baking soda, baking powder and mix well using a hand mixer.
  • Add the flour mixture in two additions, to the banana mixture until well combined.
  • Stir in the chopped walnuts and chocolate chips if using.
  • Place in the preheated oven and bake for 60 – 70 minutes or until a toothpick inserted comes out clean.
  • Let cool completely before unmolding and serving.
Mash the bananas with a potato masher
Add all the wet ingredients
Mix well
Add the dry ingredients in 2 additions
Stir in the walnuts and chocolate chips (if using) and pour into a prepared loaf pan.
Bake at 350° until toothpick inserted comes out clean.
